1 head of red cabbage, thinly sliced in 1/8 inch ribbons (about 8 cups)
2 cloves of garlic, minced (or 2 tsp of chopped garlic)
1 cup of vegetable stock or water
1 Tbsp apple cider vinegar
1-2 Tbsp real maple syrup
¼ tsp liquid smoke
2 tsp stone ground mustard
¼ tsp salt + more to taste
½ tsp ground black pepper
½ tsp smoked paprika
2 Tbsp hemp seeds for sprinkling on top (optional)
2 Tbsp finely chopped parsley for sprinkling on top (optional)
Directions
In a large sauté pan or pot, heat the oil over medium-high heat. Sauté the onion for 5 min or until soft. Add the cabbage and the garlic and sauté. As the cabbage is softening, splash the pan with a little of the vegetable stock or water. Repeat as need, until the cabbage is softened. Add in the vinegar, maple syrup, liquid smoke, mustard, salt, pepper and smoked paprika. Cook another 5 minutes or until cabbage is glossy and soft. Turn off the heat and sprinkle with the hemp seeds and parsley.
