Ingredients
- INGREDIENTS FOR SALAD:
- 1 cup romaine lettuce
- 1 cup spinach leaves
- 2 Tbsp cilantro leaves, roughly chopped
- 2 Tbsp red onion, sliced
- ½ medium avocado
- 2 radishes or 1/8 of a jicama, thinly sliced
- 2 Tbsp citrus vinaigrette
- 1 Tbsp feta or Cojita cheese, crumbled
- 1 Tbsp pumpkin seeds
- INGREDIENTS FOR CITRUS VINAIGRETTE:
- ½ cup avocado or olive oil
- 2 Tbsp apple cider vinegar
- 1 Tbsp lime juice
- 1 tsp orange zest
- 1 tsp honey
- 1 tsp garlic or shallot, chopped
- ¼ tsp sea salt
- ¼ tsp black pepper
Directions
- DIRECTIONS FOR SALAD:
In a large bowl, combine all ingredients except for the pumpkin seeds and cheese.
- Toss the ingredients together. Put onto plate and top with pumpkin seeds and cheese.
- DIRECTIONS FOR VINAIGRETTE:
Whisk or shake together all of the ingredients.
