Ingredients

  • For the Miso Dressing:

  • 3 tbsp freshly squeezed lime juice (from 2 medium limes)
  • 2 tbsp neutral oil (such as avocado or canola)
  • 1 tbsp white miso paste
  • 2 tsp minced or finely grated ginger root
  • 1 clove garlic, finely grated or minced
  • 1-2 tsp maple syrup
  • Salt to Taste
  • For the Salad Base:

  • 1 large ripe but firm avocado, diced
  • 1 cup shelled edamame
  • 4 Persian cucumbers, cut in half lengthwise and cut into ¼” half circles
  • 4 green onions, thinly sliced (about 1/2 cup)
  • 1/3 cup coarsely chopped cilantro leaves
  • 2 tbsp furikake (or sesame seeds)

Directions

  1. In a large bowl, whisk together the lime juice oil, miso paste, ginger, garlic, and maple syrup until smooth. Season lightly with salt.
  2. Add the edamame, sliced cucumbers, scallions, and cilantro.
  3. Add the diced avocado.
  4. Gently toss to coat all ingredients evenly.
  5. Sprinkle furikake (or sesame seeds) over the top.
  6. Serve immediately.
