This smoothie offers a great balance of protein, fiber, and essential vitamins, making it an excellent choice for a nutritious breakfast or post-workout drink. The addition of frozen cauliflower adds extra nutrients and helps achieve a creamy texture.

Substitutions (optional)

You can use canned or frozen sweet potato and/or butternut squash or pumpkin.  Substitute pumpkin spice for the cinnamon.

Add a bit of black pepper and ginger for a zingy kick!

Ingredients

  • 4 ounces cooked, canned or frozen sweet potato (about ½ cup, cooked and cubed)
  • ½ of a peeled, frozen banana or 3 ounces of frozen banana slices
  • ½ cup frozen cauliflower
  • 2 Tbsp of protein powder (vanilla flavor recommended)
  • 1 cup water
  • 1 tablespoon maple syrup (adjust to taste)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt, optional

Directions

  1. Blend the Smoothie: In a blender, add the cooled sweet potato cubes, ½ banana, water, honey or maple syrup, vanilla extract, ground cinnamon, protein powder, and frozen cauliflower. Blend until smooth and creamy. If the smoothie is too thick, add a little more water until you reach your desired consistency.
  2. Adjust Sweetness and Consistency: Taste the smoothie and adjust the sweetness by adding more honey or maple syrup if needed.
