Ingredients
- INGREDIENTS FOR SHRIMP:
- Shrimp, peeled, deveined, tail removed, cut into ½ inch pieces
- 1 Tbsp avocado or cooking oil
- 2 tsp minced garlic
- ½ tsp sea salt
- 2 Tbsp dry white wine or tequila
- 1 tsp chipotle powder or 1 chipotle in adobo, thinly sliced
- 2 Tbsp full fat coconut milk or vegan butter
- 1 Tbsp lemon or lime juice
- INGREDIENTS FOR LIME CABBAGE SLAW:
- 2 cup green cabbage, thinly sliced
- 3 Tbsp avocado or olive oil
- 2 Tbsp cilantro leaves, roughly chopped
- 1 Tbsp lime juice
- 1 tsp honey
- ¼ tsp salt
- ¼ tsp pepper
- INGREDIENTS FOR MANGO SALSA:
- 1 cup mango, diced
- 1 Tbsp lime juice
- ½ tsp ground cumin
- 1 green onion, thinly sliced
- ¼ tsp salt
- ¼ tsp pepper
- OPTIONAL:
- Lettuce leaves
- Heated tortillas
- Hot sauce
- Greek yogurt
Directions
- Gather and measure out all of the ingredients.
- Heat sauté pan over medium high heat and add oil. When it starts to simmer, add shrimp and sauté for 1-2 minutes or until 80% done.
- Add garlic and sea salt. Cook for another 30 seconds.
- “Stop” the cooking process by deglazing with white wine or tequila
- Turn burner to low and add chipotle, coconut milk and citrus juice.
- Serve in tortilla or lettuce wraps along with slaw and mango salsa.
