This unusual dressing contains no oil and combines the subtle tanginess of rice wine vinegar with the salty-fermented flavors of miso. Try it in place of your usual dressing choice.

Ingredients
- 5 Tbsp real maple syrup
- ¼ cup white or brown miso
- ¼ cup rice wine vinegar
- 3 Tbsp soy sauce or tamari
- 2 garlic cloves, grated
- One 1-inch piece of fresh ginger, grated
- Warm water, if necessary
Directions
- Whisk together all the ingredients. Adjust the consistency with a teaspoon of water at a time if needed.
