Ingredients

  • INGREDIENTS FOR SALAD:
  • 1 cup romaine lettuce
  • 1 cup spinach leaves
  • 2 Tbsp cilantro leaves, roughly chopped
  • 2 Tbsp red onion, sliced
  • ½ medium avocado
  • 2 radishes or 1/8 of a jicama, thinly sliced
  • 2 Tbsp citrus vinaigrette
  • 1 Tbsp feta or Cojita cheese, crumbled
  • 1 Tbsp pumpkin seeds
  • INGREDIENTS FOR CITRUS VINAIGRETTE:
  • ½ cup avocado or olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp lime juice
  • 1 tsp orange zest
  • 1 tsp honey
  • 1 tsp garlic or shallot, chopped
  • ¼ tsp sea salt
  • ¼ tsp black pepper

Directions

  1. DIRECTIONS FOR SALAD:
    In a large bowl, combine all ingredients except for the pumpkin seeds and cheese.
  2. Toss the ingredients together. Put onto plate and top with pumpkin seeds and cheese.
  3. DIRECTIONS FOR VINAIGRETTE:
    Whisk or shake together all of the ingredients.
