- 1 mango, peeled, small diced (about 1-½ cups)
- 1 red pepper, small diced (about 1 cup)
- ¼ of a medium red onion, small diced (about ½ cup)
- 2 Tbsp minced cilantro
- Zest of ½ lime
- Juice of one lime
- ¼ tsp cumin
- ⅛ tsp salt
- ⅛ tsp pepper
- In a bowl, combine all the ingredients. Serve immediately or store in the refrigerator for up to two days.
