Ingredients

  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 ripe bananas, mashed
  • ⅓ cup real maple syrup
  • 1 cup peanut or almond butter at room temperature
  • ¾ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ cup dark chocolate chips
  • ½ cup chopped walnuts

Directions

  1. Preheat the oven to 350° F and spray the pan with cooking spray.
  2. In a large bowl, whisk the eggs well until uniform in color. In order of the ingredient list, add each one at a time, except the chocolate chips and nuts, whisking well after each addition.
  3. Pour into prepared baking dish.
  4. Bake for 22-24 for the 9”x9” pan or 24-26 minutes for the 8”x8” pan at 350°F, or until set in the center.
  5. When cooled, cut into 16 squares. Store in the refrigerator for up to two weeks; or freeze these for 6 months in a tightly sealed container.
